Easy, Purple Sprouting Broccoli Soup
If you grow your own purple sprouting broccoli, you’ll know that once it starts producing, it can go a bit mad! With all that super flavoured broccoli you certainly don’t want it going to waste. Why not make a quick batch of soup.
The soup only takes forty minutes from begging to end, with a twenty minute sit down in the middle – can’t be bad.
Enjoy some for your lunch, then freeze the rest for another day.
This recipe is the same as many others, it doesn’t require exact measurements. If you have more broccoli, use another onion.
- Purple Sprouting Broccoli – Around a dinner plate full when chopped
- Onion 1
- Garlic 2 cloves
- Stock of your choice or just Water
- Oil for frying
- Salt and pepper
Wash the broccoli and set aside to drain.
Roughly chop the onion and soften on a low heat in the oil for 5 minutes, add the garlic and leave for another 5 minutes, stirring occasionally.
In the meantime roughly chop the broccoli and add to the pan, stir for a couple of minutes.
Add enough boiling water to just cover the veg, add a stock cube if you are using one.
Bring to the boil, then simmer gently for 15 minutes.
Add salt and pepper to your liking, liquidise and serve.
For an extra layer of richness, you can add a little cheese before serving. I think blue cheese goes really well.
